well at least i think it's saturday. all the days are blending together since i have been off from work. the beginning of the week seemed to linger once we hit wednesday it has just flown. back to the routine on monday so wrapping up some thoughts ideas for the weekend. i added some sweet items to my etsy shop. take a look here
t& i were chatting and somehow the discussion of pizza came up - oh yes i remember my sister is hosting a goodbye pizza party for my nephew who is heading out to texas for a job transfer later this month. in any case my sister the one from thanksgiving with the triple basting turkey skills has a brick oven in her back yard. yup imagine her husband built it and i gotta tell you they got the best pizza around. i will take photos tomorrow through the goodbye tears to show you the amazing oven that produces the amazing pizzas. bertuccis got nothing on them.
but back on the home front i wanted to share a pizza recipe that t & i adore that we haven't had for a while but talking about it makes me want to whip one up. enjoy!
potato pizza
now i know the skeptics will be like potato pizza?? but try it you will be hooked.
1 pizza dough (homemade or you can buy the dough all set to go)
2-4 large baking potatoes washed dried and unpeeled
1/2 c whipping cream
salt and ground pepper
1/2 tsp dried thyme
2 tsp finely chopped garlic
1 cup sour cream
2 cups of shredded monterey jack cheese
1/4 c chives.
Cut potatoes into 1/8 inch thick slices, drizzle with whipping cream season with salt, pepper, thyme and garlic. Bake on a greased cookie sheet at 350 degrees for 15-20 min. Roll out pizza dough bake for 6-7 minutes to crisp dough. Remove from oven spread sour cream over dough arrange overlapping potatoes on top of sour cream in a circle. sprinkle on the cheese then sprinkle all the chives. Bake at 450 degrees for 15 minutes more. Trust me you will love it.
