wide open spaces...

when i was a kid we didn't do much traveling. sure, we went on summer vacation but usually to the cape or maybe just a few states away.  we weren't traveling to other countries as so many kids today do.  strangely tho,  i have been wired to want to travel.  although i can't always venture far it's something i really enjoy. discovering new places, new foods, new paths to the unknown, it's the thrill of the journey.  we have taken a few trips recently that leave me wanting for more. wanting to move past safe and comfortable and on to a new adventure.  every day i want to discover a new freshness to life.  i want to believe that there are still lots of blank pages in my journal.  there are still lots of stories waiting to be told, and lots of stories yet to be written.

perfect summer salad

this recipe will come in especially handy later in the summer when you have no idea what to do with all those extra zucchini.

a simple vegetable peeler is all you'll need to to cut the thin lengthwise strips of zucchini.  cut off the ends of your zucchini then use your peeler to cut the strips.


you'll want to make sure you cook your strips of zucchini either in a stove top grill or saute pan coated with a tiny bit of olive oil, they only take a couple of minutes. make sure they cool completely before adding them to your salad.


i used arugula for my salad base and tossed it in a vinaigrette of 3 parts olive oil to 1 part red wine vinegar, added a touch of dijon, a crushed garlic clove, salt, black pepper and oregano, any lemon based dressing would work as well.


lay your zucchini strips on top, toss in some feta or shaved parmesan and sprinkle with toasted nuts, i used pinenuts here with the feta, but hazel nuts or slivered almonds would be just as good. to finish, drizzle a little more dressing over the top.

one sunday evening in june...

the coffee pot is set up. it's all ready to push the button in the morning. it used to work on its own but i guess its tired now.   we are all tired. busy, busy weekend.  windows are open,  a breeze is blowing in, i can hear crickets and coyotes in the distance.  it's kind of freaking me out these days.  not sure why they are so close but i can hear them every night...
 i'm living the life i was meant to live.  the choices i make, where i live, who i spend time with, what makes me happy.  i wish i could say that every day is stress free, and that we all behave all the time,  but really... what would be the point?  we would be bored.  put your self out there.  meet new friends, get to know old friends better, learn new things about yourself and each other .  i promise you will feel more alive because of it.  wishing you a wonderful week ahead...

this is one of the golf courses my dad played on weekly.  although it makes me a little sad, it mostly makes me happy that he had so many wonderful days here.  it transports me back and gives me inspiration to remember to live in the moment.
