key lime mini mousse cups

 recipe from taste of home



       ingredients
  • 4 ounces cream cheese, softened
  • 2/3 cup sweetened condensed milk
  • 1/4 cup key lime juice
  • 1/2 cup heavy whipping cream, whipped
  • 2 packages (1.9 ounces each) frozen miniature phyllo tart shells
  • fresh raspberries and lime wedges, optional

  • In a large bowl, beat the cream cheese, milk and juice until smooth; fold in whipped cream. Pipe into tart shells. Garnish with raspberries and lime wedges if desired. Serve immediately. Yield: 2-1/2 dozen.

find the time...

happiness is the meaning and purpose of life, the whole aim and end of human existence.
hope your weekend was filled with gladness, hope you had time to catch your breath.  look for the gift in the past few days.  the weather was so wonderful, much better than they had predicted.  hold on to the small  moments of joy.  
i made sure i found time this weekend to enjoy the small moments.  i am making sure this continues.
even if it means staying up 10 minutes later or waking up earlier. appreciate the little things, time with family, time with friends, learn what makes you most happy.  it's not usually something big. the days are long but the years are short.

happy monday...

hope your weekend treated you well.  this was one of the best weekends ever.  the weather was
better than mid summer.  perfect, clear, blue skies, warm and beautiful.  there is something so relaxing
about just being out in the wide open and taking in the fresh air. 
just when i thought it couldn't get  any better saturday night rolled around.
eating in a small cozy restaurant with good wine and wonderful food,
oh... and perfect company,  it doesn't get better than that.







what more could a girl want?

20 years ago today...

the doctor said, "mrs. nargi you have a little girl"!  the whole anguish of birth melted in those words.  we already had two beautiful sons, ten and seven.  now we have a beautiful little girl.  tears spilled down my cheeks.  a daughter -  someone who would bring balance to all the rough and tumble in our lives. i could now be a
wardrobe specialist to my new little doll (hence the headband). from the moment you joined our family you brought us so much joy. we are so lucky to have you.  you have the kindest heart, the sweetest smile and you bring such tenderness to our family. you've made your way through life with such a sweet, caring, tough attitude.
don't ever change.  you are so strong, so kind and so unique.  i am always in awe of your ability to balance your perception on everything.

















happy, happy birthday love.  wishing you a wonderful year ahead.  thanks for being such an amazing person
and teaching us so much.

almond joy

believe it or not i am not a big chocolate fan.   i certainly eat my fair share
but i am picky about chocolate.

 these however are deadly.

homemade almond joy cups

3/4 cup dried flaked coconut (unsweetened, if you can find it)

3-4 tablespoons sweetened condensed milk

1/4 teaspoon pure vanilla extract

1 bag of milk chocolate chips (Ghiardelli or Guittard brands)

1/4 cup toasted almonds


1. mix the coconut with the condensed milk and the vanilla in the food processor (for best results), or by hand. It should be thick and sticky. add more milk or coconut as necessary, to achieve almond joy center consistency.


2. line a mini muffin tin with about ten to twelve paper liners. melt about half of the chocolate in a microwave safe bowl, in 30 second intervals, stirring well after each. pour about a teaspoon of melted chocolate into the bottom of each liner. shake the tray back and forth to distribute the chocolate. put in about a teaspoon and a half of the coconut mixture into each, and top with an almond. pour chocolate over the top of each. shake the tray to distribute the chocolate evenly. melt more chocolate as necessary. refrigerate until chocolate is set.

Congratulations!!!

Congratulations to Keene State for winning the Little East Conference.  great season girls!!!!

spring salad






-mixed greens of your choice

-roasted beets (sliced, tossed in olive oil, and roasted at 425° until fork tender)
-grilled asparagus (tossed in olive oil, salt and pepper, and grilled for a few minutes)
-toasted pecans
-crumbled goat cheese

this salad is a perfect lunch, we've also added grilled chicken (with a little olive oil, lemon juice, salt and pepper) and made a dinner out of it.


toss in a simple balsamic vinaigrette.....

-balsamic vinegar
-olive oil
-honey
-dijon mustard

all mixed together and tossed with salad

eating ...      actually skipping dinner until later on.  i hope it's worth the wait.

listening to.. the rain.  it's been raining all week.   i have to say my grass looks sooo green.

dreaming of... sunny days and warm nights.

anticipating... vacation this summer. i need time at the beach.  sun and sand are in my future.
