cauliflour soup...

this is a great snowy day lunch.  serve with the bread from my easy bread post.

serves 4

2Tbsp olive oil
1 onion finely chopped
1 cailiflour broken into pieces
3 cups chicken stock
1 cup cream
salt and pepper
unsalted sun flour seeds for garnish
2 pieces of toasted bread

1. use a cookie cutter to cut out the stars from the toasted
bread.
2. preheat oven to 375 f. 
3. place pieces of cauliflour and chopped onion ino an
oven proof dish and  sprinkle with olive oil salt and pepper. 
4. roast until golden brown about 40 min.
5. place the cauliflour and onions in a large pot
6. cover with chicken stock
7. bring to a boil and let boil for 5 minutes.
8. add cream, season with salt and pepper
9. puree with emersion blender leave some pieces whole
10.  serve with toasted star -  drizzle a little olive oil and sprinkle with
sunflour seeds.
